Subway Inspired Double Chocolate Chip Cookies

I found the recipe for these Subway inspired double chcocolate chip cookies whilst scrolling through my Pinterest feed, as always. These are gooey, chocolatey and all things desirable. I found that the flavour and texture developed more on the second day as I proceeded to nibble on a cookie from the cookie jar. However, if you're the impatient type then I'm sure you will have no problem consuming the lot as soon as you proceed to take them out of the oven. Notes
  • Approximately makes 20 cookies. However this could differ  depending on how much batter you scoop out of the mixing bowl.
  • Ensure all ingredients are at room temperature before you begin baking.


Ingredients
  • 1/3 cup white sugar
  • 1 cup light brown sugar- packed
  • 2 teaspoons vanilla extract
  • 1 cup softened butter
  • 2 large room temperature eggs
  • 2 cups all purpose flour
  • 2/3 cup dark baking cocoa
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 6 ounces milk chocolate chips
  • 6 ounces white chocolate chips

Method

  1. Preheat oven to 170 degrees celcius.
  2. Cream together the butter & sugar in a medium bowl, add the vanilla and one egg at a time. Beat on low with a mixer.
  3. In another bowl, sift together the flour, cocoa, baking soda, and salt.
  4. Add the flour mix into the butter mix slowly and beat until well blended.
  5. Add the chocolate chips and mix
  6. Spoon about 2 inches apart onto a cookie sheet (I like to place baking paper onto a flat tray).
  7. Bake for about 10-12 minutes depending on oven temperatures.
  8. Allow cookies to cool on baking tray for 5 minutes before removing them onto a wire rack.
