Tis the Season for Galettes

As you all may know a week or two before, us Australians farewelled Summer. It just so happened to be the case that there was an abundance of peaches, raspberries and a tub full of ricotta nearing it's expiration date in the fridge. This was the perfect opportunity to make galettes. I must admit that I did cheat a little bit and opted to use readymade puff pastry sheets due to my busy schedule nowadays, however there was no compromise in taste.
